
Mat Lindsay
Mat Lindsay's culinary journey began on the central coast of New South Wales, where he, despite having never experienced upscale dining, sought employment at Rockpool, Sydney's premier restaurant at the time, to support his graphic design studies. Under the mentorship of renowned chefs Neil Perry and Kylie Kwong, at Wokpool, Rockpool, and Billy Kwong, Mat acquired invaluable knowledge about ingredients, techniques, flavor balance, and transcending the boundaries of Western and Eastern cuisines. His restaurant, Ester, established in Sydney's Chippendale in 2013, has emerged as a symbol of contemporary Australian dining. The tradition continues with Poly, the wine bar launched in 2018, and A.P Bakery, opened in 2021.
