About the Author

Nancy Singleton Hachisu lives on a farm in Japan with her family and is a James Beard Award-nominated author of two cookbooks: Japanese Farm Food and Preserving the Japanese Way. A native Californian, she has resided in Japan for thirty years, and is widely respected as an authority on Japanese cooking, both in Japan and the US.

A wonderful and exhaustive book on japanese food

This book adds a huge number of Japanese recipes to what i thought was my already large repertoire. How mistaken I was. I have already cooked a number of the dishes. Well written, easy to follow, I would heartily recommend this book to anyone who loves cooking Japanese food.

Brilliant book of Japanese classics

Brilliant book of Japanese home cooking with some more advanced bits in the mix from famous chefs as well. Beautiful pictures, great explanations of ingredients. A lot of these recipes really rely on attention to detail, and great produce/ingredients. Everything I have made from the book thus far has been delicious and 'tastes like japan'.
