Among the step-by-step tested recipes for cheese varieties are farmhouse cheddar, gouda, fromage blanc, queso blanco, marscarpone, ricotta and 30-minute mozzarella. Recipes for dairy products include creme fraiche, sour cream, yoghurt, keifer, buttermilk and clotted cream.

There are also 60 recipes for cooking with cheese including such treats such as Ricotta Pancakes with Banana Pecan Syrup, Cream Cheese Muffins, Broiled Pears and Vermont Shepherd Cheese, Proscuitto and Cheese Calzones and Grilled Vegetable Stacks with Roasted Red Pepper Sauce.

A bit annoyed

The recipes are all based on some "packet" measurement and the book (so far as I have been able to ascertain) does not give any conversion table or equivalency to allow using common measures (eg teaspoon). I suspect the "packet" is a product sold by the author. I was disappointed as it makes all the recipes useless without access to how much is in a "packet" for those unable to obtain the products.

Great for beginers

great for beginners and experts

Nverything I need

This book is filled with info on the making of a large variety of cheeses with a few recipes on how to use them. This is a pleasant change from so many other how to books that are mainly recipes and short on information. It is pleasing also that cheeses made from other than cow's milk is taken seriously and that cheeses from a variety of cultures are also included.

I'm so pleased I bought this book

This book made a process which could be difficult so simple. The instructions were easy to read, understand, and repeat. The results have been great.
