At its heart, Dalmatian cuisine is frugal, honest and rustic, with distinctive flavours, including silver beet, varenik (grape molasses) and prošek (Dalmatian fortified wine) that give it an identity all of its own. Similar to Greek and Italian food, fish, seafood, tomatoes and olives reign and the foundation of most dishes is good quality produce grown in pure, clean earth and treated simply. Some dishes include the famous Dubrovnick crème caramel, Ro?ata, Brujet (Dalmatian fish stew) and pašticada, a slow-cooked beef cheek with prunes, apples and potato dumplings.

In his first book, Dalmatia, Ino Kuvacic brings us over 100 authentic Croatian dishes.
With chapters covering vegetables and salads, meat dishes, fish and seafood and sweets, the book reveals authentic recipes and cherished food traditions of this little-known part of Europe – the spectacular Dalmatian coast. It is a region defined by the sea, and its cuisine has evolved from the a long and complex history that has brought many foreign influences both to its shores and its food.
Accompanied by stunning local photography of both this beautiful region and the culinary experiences and traditions it offers, Dalmatia will transport you to the sparkling coastline of Croatia from your own kitchen.

After qualifying as a chef, the author moved to Australia where he runs the Dalmatina restaurant with his brother. In this, his first book he introduces readers to his native Dalmatia and Croatia through its cuisine. Dalmatia contains about 100 recipes in four main chapters: Vegetables, Fish and Sea Food, Meat and Game, and Sweets. These are supported by a short introduction, a brief overview of Croatian history and a comprehensive index, as well as by many photographs of the dishes themselves interspersed with views of Croatia's varied and interesting scenery. The recipes range from easy for busy people to follow to more special dishes that require more time to prepare. The author introduces each recipe, explaining how he learned it, and its relevance to the Dalmatian way of life. Croatia deserves to be better known to most Australians; in many ways the two countries fit together hand in glove, with similar climates, love of sports and beaches, life styles and excellent opportunities for healthy diets and tourism. Moreover, many of Australia's movers and shakers have Croatian backgrounds. A couple of "grouches" however – the localities of the scenic photos are not given and the book's bulk (226 pages with hard cover) might preclude following the recipes step by step in zza small kitchen with the book propped open nearby. Overall it is good value as a tempting introduction to Dalmatian cuisine, to contemporary Croatia and its Dalmatian coast. 239 words Author: Ino Kuvacic with an introduction by Slavica Habjanovic
