You won\u2019t miss the meat at all.<\/p>\n\n\n\n<div class=\"wp-block-media-text alignwide is-stacked-on-mobile\"><figure class=\"wp-block-media-text__media\"><img loading=\"lazy\" width=\"623\" height=\"934\" src=\"https:\/\/www.booktopia.com.au\/blog\/wp-content\/uploads\/2022\/10\/cauliflower.png\" alt=\"\" class=\"wp-image-170303 size-full\" srcset=\"https:\/\/www.booktopia.com.au\/blog\/wp-content\/uploads\/2022\/10\/cauliflower.png 623w, https:\/\/www.booktopia.com.au\/blog\/wp-content\/uploads\/2022\/10\/cauliflower-200x300.png 200w\" sizes=\"(max-width: 623px) 100vw, 623px\" \/><\/figure><div class=\"wp-block-media-text__content\">\n<h2><strong><strong><strong><strong>Red curry roast cauliflower<\/strong><\/strong><\/strong><\/strong><\/h2>\n\n\n\n<p><strong>Serves:<\/strong>&nbsp;4<br><strong>Prep: <\/strong>20 Minutes <br><strong>Cook Time:<\/strong> 30 Minutes<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul><li>2 heads cauliflower<\/li><li>3 tablespoons vegetable oil<\/li><li>400 ml (13\u00bd fl oz) tinned coconut cream<\/li><li>\u00bd cup (130 g\/4\u00bdoz) red curry paste<\/li><li>5 makrut lime leaves<\/li><li>2 lemongrass stems, bruised<\/li><li>1 cinnamon stick<\/li><li>2 star anise<\/li><li>1 tablespoon cardamom pods<\/li><li>1 tablespoon palm sugar (jaggery), plus extra to season<\/li><li>1 cup (90 g\/3 oz) halved button mushrooms<\/li><li>1 small bunch water spinach (kangkung), cut into 5 cm (2 in) lengths<\/li><li>150 g (5\u00bd oz) cherry tomatoes<\/li><li>6 spears baby corn, halved salt, to season <\/li><li>soy sauce, to season<\/li><li>1 loosely packed cup Thai basil leaves<\/li><li>\u00bd cup picked coriander (cilantro) leaves<\/li><li>lime wedges, to serve<\/li><li>steamed rice, to serve<\/li><\/ul>\n<\/div><\/div>\n\n\n\n<h4><strong>Method<\/strong><\/h4>\n\n\n\n<p>Heat your oven to 220\u00b0C (430\u00b0F) fan-forced. Cut the cauliflower into quarters and drizzle with 2 tablespoons oil. Place in a lined roasting pan and roast for 30 minutes until browned and cooked through.<\/p>\n\n\n\n<p>Meanwhile, heat a large wok over a high heat and add the remaining oil and about half the coconut cream. Fry for about 5 minutes until the oil in the coconut cream starts to \u2018crack\u2019 and separate. Add the curry paste and fry for about 3 minutes, stirring constantly until very fragrant, then add the lime leaves, lemongrass, spices, palm sugar and about 700 ml (23\u00bd fl oz) water. Bring to a simmer and cook for about 5 minutes.<\/p>\n\n\n\n<p>Stir in the mushrooms and simmer for a few more minutes, then add the water spinach, tomatoes and corn and bring to a simmer. Stir in the remaining coconut cream and simmer again for just a minute or two. Taste, and adjust the seasoning with salt, soy sauce and palm sugar if needed.<\/p>\n\n\n\n<p>Place the cauliflower in serving bowls. Spoon the curry over and scatter with the herbs. Serve with lime wedges and rice.<\/p>\n\n\n\n<p class=\"has-medium-font-size\"><strong>Tips<\/strong><\/p>\n\n\n\n<p>Seasoning is all important for a dish like this; it\u2019s about the balance between salty, savoury, sweet and sour.
