The best thing about them is they\u2019re also about a hundred times bigger (slight exaggeration), so you only need a few to pack a punch.<\/p>\n\n\n\n<p><strong>Serves:<\/strong>&nbsp;4<\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul><li>4 cups (1 litre) vegetable or chicken stock<\/li><li>2 tablespoons macadamia oil<\/li><li>2 eschalots, finely diced<\/li><li>1 garlic clove, crushed<\/li><li>2 Geraldton wax sprigs, needles finely chopped (or 1 teaspoon powder)<\/li><li>150 g (5\u00bd oz) arborio rice<\/li><li>2 cups (500 ml) white wine<\/li><li>\u00bd cup (50 g) finely grated parmesan<\/li><li>Native herbs, crisp-fried, to serve<\/li><\/ul>\n<\/div><\/div>\n\n\n\n<p><strong>Bunya Nut Butter<\/strong><\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul id=\"block-9e7bd6aa-0886-4942-9c51-6d2e13155f15\"><li>225 g (8 oz) bunya nuts, chopped<\/li><li>2\u00bd tablespoons macadamia oil<\/li><\/ul>\n\n\n\n<p><strong>Bush Green Pesto<\/strong><\/p>\n\n\n\n<p><strong>Ingredients<\/strong><\/p>\n\n\n\n<ul><li>5 cups (250 g) warrigal greens<\/li><li>2\u00bd cups (50 g) sea parsley<\/li><li>1 cup (50 g) native basil<\/li><li>3 finger limes, pearls squeezed<\/li><li>1 cup (250 ml) macadamia oil<\/li><li>20 desert limes<\/li><li>\u00be cup (100 g) macadamia nuts, roasted and chopped<\/li><li>\u00be cup (100 g) bunya nuts, toasted and chopped<\/li><li>3 garlic cloves<\/li><li>Juice of 2 lemons<\/li><li>\u00b2\u2044\u00b3 cup (70 g) parmesan, finely grated<\/li><\/ul>\n\n\n\n<h4><strong>Method<\/strong><\/h4>\n\n\n\n<p>For bunya nut butter, heat oven to 180\u00b0C (350\u00b0F). Roast bunya nuts for 3\u20134 minutes until hot but not browned. Reserve about 6 nuts to serve, then place the rest in a food processor or blender, add oil, 150 ml (5 fl oz) water and blitz on high speed until very smooth, scraping down sides occasionally if needed. If it\u2019s a little dry, add a splash more water; you\u2019re aiming for a nut butter consistency. Season to taste with salt and ground pepperberry. Nut butter will keep refrigerated for a month.<\/p>\n\n\n\n<p>For bush green pesto, blanch warrigal greens in boiling water for 1 minute then refresh in iced water. Drain well, roughly chop, then add to a food processor with herbs, finger lime and a drizzle of oil. Blitz to a coarse puree, then add desert limes, macadamia nuts, bunya nuts and garlic and continue to blitz, drizzling the remaining oil in slowly. Stir in lemon juice, then parmesan and season to taste with salt and freshly ground pepperberry.
