Add stock, lime leaves and fish sauce; bring to a simmer. Cook for 5 minutes. Season well.<\/p>\n\n\n\n<p>Add salmon to pan. Reduce heat to low; cook salmon for 4 minutes. Turn salmon; cook for a further 3 minutes or until just cooked through.<\/p>\n\n\n\n<p>Thinly slice the remaining pineapple. Place sliced pineapple in a medium bowl with remaining tomatoes, remaining ginger, the coriander sprigs, basil and lime juice; toss gently to combine.
