love this classic South-East Asian combination because it’s incredibly quick and simple yet produces such a dynamic balance of flavour. You can do a more classic sweet and sour version by substituting the tamarind with ketchup – YUP, ketchup – and if you’re not a fan of seafood simply substitute the prawns for finely sliced chicken or pork.

Tamarind Prawns

Feeds: 3-4 as a shared dish

GF/DF

Ingredients

  • 3 tablespoons olive oil
  • 1 red onion, halved & sliced into 5 mm strips lengthways
  • 2–3 garlic cloves, crushed
  • 1 yellow capsicum, quartered lengthways & sliced into 5 mm strips
  • 450 g raw prawns, peeled, deveined & butterflied
  • 80 ml (1/3 cup) tamarind paste OR 3 tablespoons ketchup
  • 2 tablespoons sriracha chilli sauce, or to taste
  • 2 tablespoons sugar
  • 1–2 tablespoons fish sauce, or to taste

To Serve

  • 1/2 cup roughly chopped coriander, including stalks
  • Steamed rice

Method

Combine the olive oil, onion and garlic in a large non-stick frying pan over high heat. Once it starts to sizzle, cook briefly until the garlic is just starting to turn golden. Add the remaining ingredients and stir-fry until the prawns are just cooked through.

Immediately transfer to a plate, top with the coriander and serve hot with steamed rice.
