About the Authors

In 2000, brothers David and Matthew became partners in a coffee wholesaler/specialty roaster based in Sydney's Artarmon. After learning how to blend and roast coffee, the next logical step for the brothers was to enter the retail coffee industry so they decided to purchase four up-market cafes in Brisbane called GOSH Coffee. It was here that they learned not only their barista craft, but how to apply it in pressure situations whilst not compromising on presentation and customer service. David and Matthew have since moved on from the original wholesaler/specialty roaster and have started their own wholesale coffee company in Sydney, where, apart from supplying coffee to cafes and restaurants from Hobart to Cairns, they teach their own customers and the public art of espresso.

Their Barista Basics Coffee Academy, a purpose-built cafe for this instruction was completed in mid-2003 and re-built again in 2005. The Barista Basics course itself is the result of two years of research involving University trained teachers, professional baristas and industry leaders. It is undoubtedly the most well-regarded course of its type in Australia and is the only barista school in Australia to carry TAFE affiliation. Matthew and David are feature writers for industry mags Bean Scene and Tea and Coffee Asia and are regular contributors to Loreal's Matrix magazine. David and Matthew have appeared on Australian television on Bert Newton's Good Morning Australia, Channel 9's Fresh with Jeff Jansz, Channel 9's Mornings with Kerri-Anne and NBN's Today Extra with Nat Jeffery. They have worked as official espresso tasters for Choice Magazine's 2004 and 2005 review of home espresso machines. They also periodically appear on Ella James' Saturday night radio program on 2UE and were recently featured on Tony Delroy's Night Life program on ABC radio.
