This book goes through making choux pastry step by simple step. So don't be afraid to start, it makes it very clear. If like me you're an old hand at choux pastry, dont worry. It then takes the basic eclair recipe and invents over 25 delicious variations on the eclair. Beautiful photographs portray beautiful eclairs. Lime, coconut, caramel, some wonderful variations on the plain eclair. It's so much more than just chocolate!
