      The recipes are all based on some "packet" measurement and the book (so far as I have been able to ascertain) does not give any conversion table or equivalency to allow using common measures (eg teaspoon). I suspect the "packet" is a product sold by the author. I was disappointed as it makes all the recipes useless without access to how much is in a "packet" for those unable to obtain the products.

          This book is filled with info on the making of a large variety of cheeses with a few recipes on how to use them. This is a pleasant change from so many other how to books that are mainly recipes and short on information. It is pleasing also that cheeses made from other than cow's milk is taken seriously and that cheeses from a variety of cultures are also included.
