Caroline is a proponents of the ideals of simplicity, quality and artistry in sushi- making and has long been a champion of ecologically responsible eating. Her support of sustainable and local seafood sources won her the prestigious Green Apple Award in 2005, and an RSPCA Good Business Award for commitment to improving animal welfare in 2007.
